DIY Fresh Rice Paper Spring Rolls

I LOVE these easy and delicious spring rolls you can make at home. With the right ingredients and instructions these yummy morsels take about 20 seconds to make and about 30 seconds to eat. A fresh crisp texture with the tangy chili sauce and sweet pineapple is the PERFECT flavor profile. I love to eat these for lunch, or even just for a quick snack.

How to Make Spring Rolls

Now let me clarify here that these are the fresh spring rolls. There are many that are fried too, but these ones go for a more fresh and crispy vibe with the veggies than the shell itself being crunchy.

These are SOOO easy to make too. Here is what you are going to need:

Then you also need a pan of warm to hot water, and a plate

Instructions:

  1. I like to shred my carrots and cucumbers first.
  2. Then I make sure the chicken is shredded and ready to go.
  3. To make the rolls you need to wet the rice paper so it will roll. Do this my taking the dry sheet and dipping it through the hot water. You don’t need to soak it or hold it in, simply wet it with the warm/hot water and then lay it on the plate to soften. It takes just a few seconds. Sometimes I even just run hot tap water over the dry sheet real quick to save time and dishes.
  4. With the Rice sheet on the plate, I put a spoonful of each of the ingredients. Chicken, Pineapple, Carrots, Cucumbers. Then I drizzle about a Tablespoon of the chili sauce across.
  5. To roll, fold the two sides over the pile in the middle (Like you are trying to wrap a burrito so nothing will fall out the ends). Then roll the whole thing up! Yum!

What Makes Spring Rolls Healthy

Low Calorie, nutrient dense. Need I say more? Really the only thing that isn’t “healthy” in these things is the chili sauce… and as they say.. moderation in all things. In the small dose you are getting here, no harm done to a yummy veggie packed snack!

Here are some more details about what makes Spring Rolls healthy:

  1. Low Calorie: Rice paper is low calorie and low fat. The veggies are also low calorie and help to fill you up in a healthy way!
  2. Nutrient-Rich: Fresh spring rolls are full of vitamins and nutrients from the veggies! Carrots provide Vitamin A, and lettuce, cucumbers, and any herbs you choose to add will get you a good dose of Vitamin C and other nutrients. 
  3. Protein: Lean proteins like chicken (or shrimp, or tofu if you use those) are filling and great for your body!
  4. Minimal Added Fat and Sugar: Like I said, a tablespoon of chili sauce isn’t going to tip the scales. These are a tasty treat that are just plain good!
