For some reason eggs are suddenly a delicacy and are wayyy too expensive right now. I also had to stop consuming dairy for a while while nursing my first baby due to a milk soy intolerance. And these two things…. led to the discovery of the BEST milk free and egg free (but still delicious and fluffy) pancakes. I make about 30 of these at a time and then freeze a bag of them to heat up for a quick breakfast.
Making the Pancakes
As with most recipes I make… I just mix all these things together in a bowl and whisk them up real good! This recipe makes about 10 pancakes.
- 1 Cup Flour
- 3 Tablespoons Sugar
- 2 1/4 teaspoons Baking Powder
- 1/4 teaspoon salt
- 2 1/2 Tablespoons Oil
- 2/4 Cups Water
This makes a decently thick batter. I choose not to water it down but to spread it out on the pan a little (it doesn’t spread out into nice circles super well on its own). I scoop about 1/4 cup of batter and then spread it into roughly a 3-4 inch pancake.
Cook on medium heat until bubbles pop and stay and then flip it over for a minute or so.

Best Ways to Freeze the Pancakes
To freeze the pancakes I just put them all on a plate as I make them and let them cool for an hour or so. Once they are not warm anymore, I stack them nicely and put them into a Ziplock bag. When I put them into the freezer i just make sure they are pretty flat.
To defrost them, you can either use a microwave or a toaster. Microwave takes about 30 seconds. Toaster sometimes takes a couple rounds to get the middle completely thawed. I like them a little toasted!
Best Ways to Eat the Pancakes
These are one of my go-to toddler breakfasts. Pull out a pancake with some syrup and viola happy baby.
My absolute favorite way to eat a pancake…. well actually I have two. Sweet and savory.
- Sweet: Peanut butter, Syrup, and Applesauce. SOOOO good!
- Savory: While the pancake is still warm, spread a thin layer of cream cheese, put a slice of cheddar cheese and let them soften a little. I fry an egg sunny-side-up and then let the yolk run all over the whole deal. SOOO good!
These are also really good with jelly, or homemade syrups etc… Enjoy!!
